What to Expect
Meet your guide and prepare to shatter your prior notions of Nepalese diet. On a table before you lies a spread of buffalo organs for tasting, including the brains, lungs, tongue, blood, intestines, bone marrow, and eyeballs. As an added bonus, your guide may even add bull testicles to the menu, if they're available. These organs have an ancient culinary origin, but today they are eaten mostly for the taste.
Learn about the history and tradition of consuming the internal organs of animals. While not common in most of Nepal, Kathmandu maintains a devoted community practicing ancient cooking secrets. Your guide shares some of these secrets with you, letting you participate in the preparation of a truly unconventional platter.
